13. Tra Vinh

2. Linh Fish and Wild Cotton Flower Hotpot

The ingredients for this dish are all from the local riverine countryside, making it a signature dish of the Mekong Delta. Linh fish is best at the beginning of the flood season, when the fish bones are still soft, and the fish belly is fatty and delicious.

Wild cotton flower, abundant in this region, grows in vibrant yellow colors, covering marshes, riverbanks, and rice fields. Its aromatic and crunchy texture makes it a favorite among the locals.

 

3. Fermented Fish Hotpot - Long An

As the name suggests, fermented fish hotpot is made from fermented fish, a specialty of the Mekong Delta. A true Mekong Delta hotpot will include squid, shrimp, sea fish, and various types of vegetables, along with fermented fish paste or fermented linh fish paste.

The fish paste must be fermented in pottery jars for a long period to develop its flavor and aroma. When used to cook the hotpot, the fermented fish paste is diluted with broth made from pork bones.

The broth will have a sweet, clear taste with the distinctive aroma of fermented fish. The hotpot will also include eggplant, bitter gourd, mushrooms, and other vegetables to make it more attractive and less overwhelming.

The fragrant aroma of Thai glutinous rice, combined with free-range chicken eggs, distinctive condensed milk flavor, rich Thốt Nốt palm sugar, and sweet Thai cane sugar, all mixed with xiêm coconut milk and a hint of durian essence, creates a delightful fragrance.

 

6. Pickled White Radish - Bạc Liêu

With a large population of Chinese ethnic minorities, Bạc Liêu's cuisine blends the cultural characteristics of Teochew (Chaozhou). Among them, one outstanding dish, known as "a hundred-year specialty," cannot be missed when visiting Bạc Liêu, and that is pickled white radish.

Pickled white radish, also known as "xá bấu," originates from salted white radish, a traditional Teochew dish brought by Teochew people migrating to the Mekong Delta. In Chinese, "xá bấu" means "salted radish."

The dish consists of salted white radish and salt. After soaking in salt and being sun-dried continuously, the white radish gradually loses water, becoming softer and drier. Despite its simplicity, this dish has a remarkably rich and unique aroma, making it an excellent ingredient for many delicious dishes.

 

7. Stone Sprout Dish - Hậu Giang

Stone sprout is a specialty unique to Hậu Giang. This dish piques the curiosity of many diners, not only because of its unique name but also because of its unique preparation method. At first glance, "stone sprouts" may evoke images of stone-like food.

In reality, stone sprouts are not the main ingredient of the dish but rather a tool used in the cooking process. Each serving of stone sprout dish consists of 3-4 heated stones used to grill wild boar meat.

The dish is served when the stones are at their hottest. Diners quickly place thinly sliced ​​wild boar meat onto the hot stones, listening to the sizzle of the hot stones and the fat from the meat dripping down. When the aroma fills the air and a thin wisp of smoke rises, indicating that the meat is golden brown and aromatic, it is ready to eat.

Such a unique dish should not be missed when visiting Hậu Giang.

 

8. Grilled Snakehead Fish in Bamboo Tubes - Vĩnh Long

Snakehead fish, also known as "cá bống kèo," is favored by many for its tender meat. Snakehead fish can be prepared in various dishes such as braised snakehead fish with pepper, crispy fried snakehead fish, grilled snakehead fish with salt and chili, and sour soup with snakehead fish.

Among them, perhaps the most special dish is grilled snakehead fish in bamboo tubes. Grilled snakehead fish in bamboo tubes is a dish that always contains many new and exciting elements but never fails to impress diners with its uniqueness and delicious aroma.

Snakehead fish meat is naturally sweet, fragrant, and non-fishy, making it highly favored and a source of creative inspiration for chefs.
